A indústria oleícola de Lisboa na segunda metade do século XVI: o Regimento dos lagareiros dos lagares de azeite de 1572 e os capítulos que se lhe acrescentaram em 1575

Abstract

Neste estudo, trata-se da indústria oleícola de Lisboa na segunda metade do século XVI. Fala-se da tipologia dos seus lagares e da mão-de-obra a eles afecta; da medição, acondicionamento e da moagem da azeitona; dos desvios de azeitona e/ou de azeite neles verificados; da moral e da disciplina no interior destas instalações; da fiscalização deste mester por parte dos oficiais camarários; e das multas aplicadas aos mestres e outros obreiros que violavam as normas do seu regi- mento. Termina-se com uma reflexão acerca da situação laboral dos lagareiros e da desconfiança que impendia sobre a sua honestidade.

This study deals with the olive oil industry in Lisbon in the second half of the 16.th century. It’s about the typology of the oil-presses and their correlative workmanship; about the oil measurement, conditioning and the olive milling; about the olive and/or oil deviation that used to happen in the oil-presses; about the moral and discipline inside these installations; about this craft superintendence under the town hall officials; about the fines applied to the craft master and other workers who infringed their discipline rules. It ends with a reflection about the olive-pressers working situation and the suspicions that threatened their honesty.
