Da influência portuguesa na gastronomia do litoral paranaense: apontamentos sobre a cambira e o barreado

Abstract

The presence of Portuguese colonizers was instrumental in building the Paraná coast cuisine, although many of its contributions were absorbed into local culture so that they are no longer recognized as such. The very difficulty of defining a seaside cuisine today complicates this analysis.This article is a reflection on the Portuguese influence on the contemporary cuisine of Paraná coast, electing, as focus of analysis, two dishes very peculiar and different from each other: the Cambira and Barreado, traditional dishes clearly influenced by Portuguese heritage and currently used as identity symbols of the region, including in the tourism context.

A presença do colonizador português foi determinante na construção da gastronomia do litoral paranense, embora muitas de suas contribuições estejam tão assimiladas que deixam de ser reconhecidas como tal. A própria dificuldade em se definir uma gastronomia litorânea na atualidade dificulta esta análise. Este texto tem como objetivo refletir sobre a influência portuguesa na formação da gastronomia contemporânea do litoral paranaense, elegendo, como foco de análise, duas iguarias bastante peculiares e diferentes entre si: a cambira e o barreado, pratos tradicionais claramente influenciados pela herança portuguesa e utilizados, atualmente, como símbolos identitários da região, inclusive no contexto da atividade turística.
